Baked Tortellini Casserole

Ingredients

  • 2 Tbsp. butter
  • 1 lb. ground beef
  • 1 large sweet onion, peeled and diced
  • 2 Tbsp. minced garlic
  • 1 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 1 can (28 oz.) diced tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 package (24 oz.) refrigerated cheese tortellini
  • 31/2 cups grated mozzarella cheese, divided

Directions

  1. Preheat oven to 350°F. Prepare a large casserole dish with nonstick baking spray. Set aside.

  2. Heat butter in a large skillet over medium-high heat. Sauté beef, onion, and garlic in butter until meat is no longer pink, about 8 minutes. Season with salt and pepper.

  3. Add tomatoes and tomato sauce and stir to combine. Reduce heat to medium-low and simmer 2-3 minutes.

  4. Stir in tortellini and half of mozzarella cheese. Transfer to casserole dish and sprinkle remaining cheese over the top.

  5. Cover dish with foil and bake 30 minutes. Serve hot.
