Ingredients
- 1 tbsp. smoked paprika
- 1 1/2 tsp kosher salt
- 1 tsp chili powder
- 1/2 tsp light brown sugar
- 1/2 tsp black pepper
- 2 lbs. sirloin steak tips
- 2 tbsp. unsalted butter
- 1 cup chopped yellow onion
- 2 garlic cloves, minced
- 14.5 oz. can diced tomatoes, undrained
- 1/2 cup heavy whipping cream
- 1 tbsp. chopped fresh rosemary
- Fontina Cheese Grits (see recipe)
- Garnish: chopped fresh rosemary
Directions

In a small bowl, stir together paprika, salt, chili powder, brown sugar, and pepper; sprinkle all over steak tips.

In a large skillet, melt butter over medium-high heat. Add half of steak tips; cook, stirring occasionally, until browned, about 5 minutes. Remove from skillet. Repeat with remaining beef. Return beef to pan.

Add onion and garlic to pan; cook for 3 minutes. Stir in tomatoes, cream, and rosemary; bring to a simmer. Cook, stirring occasionally, until meat is tender and sauce is slightly thickened, about 18 minutes. Serve with Fontina Cheese Grits. Garnish with rosemary.
