Ingredients
- 4 cups water
- 2 tbsp. unsalted butter
- 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup quick-cooking grits
- 1 1/2 cups shredded fontina cheese

In a medium Dutch oven, bring 4 cups water, butter, salt and pepper to a boil over medium-high heat. Gradually whisk in grits; reduce heat to medium-low. Cover and cook, stirring occasionally, until tender, 5-6 minutes. Remove from heat; whisk in cheese until smooth. Serve immediately.
