Ingredients
- 1 1/2 lbs. baby red potatoes, sliced 1/4-inch thick
- 1/4 cup grated Parmesan cheese
- 1 1/2 tbsp. olive oil
- 1 1/2 tsp onion powder
- 3/4 tsp kosher salt
- 3/4 tsp garlic powder
- 1/2 tsp black pepper

Preheat oven to 400. Line a large rimmed baking sheet with parchment paper.

In a large bowl, stir together all ingredients until well combined. Spread in an even layer on prepared pan. Cover with foil.

Bake for 20 minutes. Uncover and stir; bake until golden brown and tender, 15-20 minutes more. Serve immediately.
