Chive and Cheddar Cornbread Drop Biscuits

Ingredients

  • 2 (6oz.) packages buttermilk cornbread mix
  • 1 1/3 cups self-rising flour
  • 2 tbsp. chopped fresh chives
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2/3 cup cold unsalted butter, cubed
  • 1 1/3 cups cold whole buttermilk
  • 1/2 cup shredded sharp yellow Cheddar cheese
  • 2 tbsp. unsalted butter, melted
  • Garnish: melted butter, chopped fresh chives

Directions

  1. Preheat oven to 450. Spray a 12-inch cast-iron skillet with cooking spray.

  2. In a large bowl, whisk together cornbread mix, flour, chives, salt and pepper. Using a pastry blender, cut in cold butter until mixture is crumbly. Stir in buttermilk and Cheddar just until combined. Drop dough by 2/3 cupfuls into prepared pan. Brush tops with melted butter.

  3. Bake until golden brown, 15-17 minutes. Brush with melted butter, and sprinkle with chives.
