Ingredients
- 1/4 cup plus 2 tbsp. vegetable oil, divided
- 1 cup plain yellow cornmeal
- 1/2 cup self-rising flour
- 2 tbsp. sugar
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp kosher salt
- 1/2 cup canned pumpkin
- 3/4 cup whole milk
- 1 large egg

Preheat oven to 425. Brush 2 (7 well) cast-iron corn stick pans with 2 tbsp. oil. Place pans in oven until oil is very hot, about 5 minutes.

In a large bowl, whisk together cornmeal, flour, sugar, pie spice and salt. In a small bowl, whisk together pumpkin, milk, egg, and remaining 1/4 cup oil. Make a well in center of dry ingredients; stir in pumpkin mixture just until combined.

Carefully remove hot pans from oven. Divide batter among prepared wells. (Batter should sizzle.)

Bake until golden brown and crisp, about 15 minutes. Serve immediately.
