Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup plain yellow cornmeal
- 2 tsp sugar
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/4 tsp ground cumin
- 1/3 cup whole buttermilk
- 1/4 cup water
- 6 tbsp. vegetable oil, divided
- 1 large egg
- 1/4 cup chopped cooked bacon
- 1/4 cup corn kernels
- 1 tbsp. diced jalapeno
- Sour cream, to serve
- Garnish: chopped cooked bacon, diced jalapeno, black pepper
Directions

In a medium bowl, whisk together flour, cornmeal, sugar, baking powder, salt and cumin. In a small bowl, whisk together buttermilk, 1/4 cup water, 2 tbsp. oil and egg. Stir buttermilk mixture into flour mixture just until combined. Fold in bacon, corn and jalapeno.

In a large cast-iron skillet, heat 2 tbsp. oil over medium-high heat; reduce heat to medium. Drop batter by 3 tbsp.ful 2 inches apart into pan. Cook until golden brown, about 2 minutes per side. Repeat with remaining batter, adding remaining 2 tbsp. oil to pan, if necessary.

Serve with sour cream. Garnish with bacon, jalapeno and pepper.
