Tex-Mex Hoecakes

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup plain yellow cornmeal
  • 2 tsp sugar
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cumin
  • 1/3 cup whole buttermilk
  • 1/4 cup water
  • 6 tbsp. vegetable oil, divided
  • 1 large egg
  • 1/4 cup chopped cooked bacon
  • 1/4 cup corn kernels
  • 1 tbsp. diced jalapeno
  • Sour cream, to serve
  • Garnish: chopped cooked bacon, diced jalapeno, black pepper

Directions

  1. In a medium bowl, whisk together flour, cornmeal, sugar, baking powder, salt and cumin. In a small bowl, whisk together buttermilk, 1/4 cup water, 2 tbsp. oil and egg. Stir buttermilk mixture into flour mixture just until combined. Fold in bacon, corn and jalapeno.

  2. In a large cast-iron skillet, heat 2 tbsp. oil over medium-high heat; reduce heat to medium. Drop batter by 3 tbsp.ful 2 inches apart into pan. Cook until golden brown, about 2 minutes per side. Repeat with remaining batter, adding remaining 2 tbsp. oil to pan, if necessary.

  3. Serve with sour cream. Garnish with bacon, jalapeno and pepper.
