Italian Eggs In Purgatory

Ingredients

  • 3 garlic cloves, sliced
  • 3 tbsp. olive oil
  • 28 oz. whole peeled tomatoes
  • 1/4 tsp kosher salt
  • 1/4 tsp red pepper flakes
  • 4 eggs
  • Parmesan
  • Basil

Directions

  1. Cook garlic in olive oil in a large skillet over medium heat until golden, 2-4 minutes. Add tomatoes, red pepper flakes and salt. Simmer until thickened, 10-12 minutes; season with salt. Reduce the heat to medium low and make 4 wells in the sauce; crack an egg into each. Partially cover and cook until the whites are set but the yolks are still running, 6-8 minutes. Top with Parmesan, basil and more red pepper flakes.
