Chiptole Pork Taco Filling

Ingredients

  • 1 red onion, chopped
  • 1 canned chipotle, chopped
  • vegetable oil
  • 2 tsp ground cumin
  • 2 tsp coriander
  • 1 lb. ground pork
  • 1 tbsp. adobo sauce (from the can of chipotles)
  • 2 tbsp. chicken broth
  • Salt

Directions

  1. Cook onion and chipotle in vegetable oil until browned, about 4 minutes. Add cumin and coriander; cook 30 seconds. Add pork and adobo sauce and cook, breaking up the meat, until browned, about 5 minutes. Add chicken broth and season with salt. Serve in taco shells with toppings.
