- 1 lb. skirt steak
- Salt and pepper
- 1 bunch scallions
- Vegetable oil

Season steak with salt and pepper. Cook on an oiled grill pan over medium-high heat, turning once, about 10 minutes for medium rare; remove to a cutting board and let rest 5 minutes, then slice. Brush scallions with vegetable oil, add to the pan and cook, turning, until charred, 3 minutes; remove to the cutting board and chop. Serve the steak and scallions in toasted tortillas with toppings.
