Hollandaise with Cilantro

Ingredients

  • 1 egg yolk
  • 1/4 cup mayo
  • 1 tsp lemon juice
  • Pinch of cayenne and salt
  • 2 tbsp. melted butter
  • Cilantro, finely chopped

Directions

  1. Puree egg yolk, mayo, lemon juice, cayenne and salt in a blender. Pulse in melted butter. Place the sauce in a heatproof bowl set over a saucepan of simmering water; cook, whisking, until thickened. Stir in some finely chopped cilantro. Spoon over poached eggs, asparagus, fish or chicken.
