Ingredients
- 1 egg yolk
- 1/4 cup mayo
- 1 tsp lemon juice
- Pinch of cayenne and salt
- 2 tbsp. melted butter
- Cilantro, finely chopped
Directions

Puree egg yolk, mayo, lemon juice, cayenne and salt in a blender. Pulse in melted butter. Place the sauce in a heatproof bowl set over a saucepan of simmering water; cook, whisking, until thickened. Stir in some finely chopped cilantro. Spoon over poached eggs, asparagus, fish or chicken.
