Hot Potatoes

Barbecue Sauce+Broccoli+Shredded Pork+Cheddar
Madras Curry Simmer Sauce+Cauliflower+Chicken+Cilantro
Fresh Salsa+avocado+pinto beans+pickled jalapenos+chili powder
Pesto+spinach+fried egg+bacon
Mayo+Lettuce, Tomato and onion+Ground beef+colby jack

Ingredients

  • 4 medium russet or sweet potatoes
  • Sauce (1/2 cup total):
  • Pesto
  • Fresh salsa
  • Barbecue sauce
  • Simmer sauce
  • Sour cream
  • Mayo
  • Marinara
  • Hummus
  • Cheese sauce
  • Vegetables (1 to 2 cups total):
  • Cooked greens
  • Sauteed mushrooms
  • Avocado
  • Onion
  • Cooked broccoli or cauliflower
  • Diced tomatoes
  • Shredded lettuce
  • Protein:
  • 4 large eggs, cooked as desired
  • 15 oz. can beans, rinsed
  • 8 oz. cooked pork, chicken or ground beef
  • Garnish (4 tsp total):
  • Crumbled cooked bacon
  • Chopped pickled jalapenos
  • Shredded cheese
  • Chopped fresh herbs
  • Chopped olives
  • Dried spices

Directions

  1. Bake: Pierce potatoes all over with a fork. Microwave on Medium, turning once or twice, until soft, about 20 minutes. Transfer to a cutting board and let cool slightly. Holding it with a kitchen towel, make a lengthwise cut to open each potato, but don’t cut all the way through. Pinch the ends to expose the flesh.

  2. Stuff: Top each potato with a Sauce, Vegetables, Protein and Garnish.
