Kale+Tabbouleh=Kabbouleh

Ingredients

  • 1/2 cup bulgur wheat
  • 4 cups chopped kale leaves
  • 1 pint grape tomatoes, quartered
  • 3 scallions (white and light green parts), chopped
  • 1/2 English cucumber, cut into small pieces
  • 3 tbsp. fresh lemon juice
  • 2 tbsp. olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Directions

  1. Put the bulgur in a medium bowl. Cover with hot water by 1/2 inch. Let soak for about 30 minutes, or until tender. Drain in a strainer and shake out all of the excess water.

  2. In a large bowl, combine the kale, tomatoes, scallions, cucumber and bulgur. Add the lemon juice, oil, salt and pepper. Stir well to combine.
