Ingredients
- 4 cups seedless watermelon chunks
- 1/4 cup sugar
- 2 tbsp. fresh lemon juice
- 6 fresh mint leaves

Put the watermelon in a blender and puree. Add the sugar, lemon juice and mint. Blend until the mint is finely chopped. Skim off the foam from the top. Pour into an 8×8-inch metal baking dish and put in the freezer.

After about 45 minutes, the mixture will start to form ice crystals. Stir it to break up the crystals. Freeze again, without stirring, for about 2 hours more, or until completely frozen. Use a fork to scrape the watermelon ice into fine shavings. Serve in cold glasses.
