Ingredients
- Nonstick vegetable oil cooking spray
- 1/3 cup dried bread crumbs
- 1/3 cup whole milk
- 1 large egg
- 1 1/2 lbs. ground chuck
- 1 small yellow onion, chopped
- 1/4 cup chopped parsley, plus more, for serving
- 1 cup grated sharp Cheddar
- 1/4 cup plus 2 tbsp. ketchup
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 medium Yukon Gold potato
- 2 tsp olive oil

Preheat the oven to 400. Coat the inside of an 8 1/2 × 4 1/2-inch loaf pan with cooking pan.

In a small bowl, combine the bread crumbs and milk and let soak for 5 minutes until softened.

Crack the egg into a large bowl and beat with a fork. Add the meat, onion, parsley, Cheddar, 1/4 cup of the ketchup, the salt and pepper and crumble in the softened bread crumbs. Using your hands, gently mix until well combined.

Add the meat mixture to the prepared pan, gently forming it to the shape of the pan. In a small bowl, combine the remaining 2 tbsp. ketchup with 2 tbsp. water. Spread over the top.

Slice the potato as thinly as you possibly can. Layer over the top of the meat loaf and brush with the oil. Place the pan on a rimmed sheet pan.

Bake the meat loaf for about 1 hour, or until the potatoes are tender. Sprinkle the top with a little parsley. Let rest for 10 minutes before slicing.
