Ingredients
- 1 1/2 quarts vegetable oil
- 1 lb. medium parsnip, shaved into ribbons with vegetable peeler
- Quick Coriander Salt (see recipe)
- 1/2 cup mayo
- 2 tsp Sriracha

In a medium saucepan, heat oil to 365. Working in batches, fry parsnips until golden, 30 seconds. Using slotted spoon, transfer parsnip chips to paper towels. Sprinkle with coriander salt. In a small bowl, whisk mayo and Sriracha; season. Serve chips with Sriracha mayo.
