Parsnip Chips with Sriracha Mayo

Ingredients

  • 1 1/2 quarts vegetable oil
  • 1 lb. medium parsnip, shaved into ribbons with vegetable peeler
  • Quick Coriander Salt (see recipe)
  • 1/2 cup mayo
  • 2 tsp Sriracha

Directions

  1. In a medium saucepan, heat oil to 365. Working in batches, fry parsnips until golden, 30 seconds. Using slotted spoon, transfer parsnip chips to paper towels. Sprinkle with coriander salt. In a small bowl, whisk mayo and Sriracha; season. Serve chips with Sriracha mayo.
