Roasted Romanesco with Lemon Salsa

Ingredients

  • 1 head Romanesco, cut into large florets
  • 6 tbsp. olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp lemon zest, plus 1 tbsp. juice
  • 1 1/2 tsp chopped fresh parsley
  • 1 garlic clove, grated

Directions

  1. Place baking sheet in oven; preheat to 450. In bowl, toss Romanesco, 3 tbsp. oil and Cajun seasoning. Transfer to baking sheet. Roast, turning once after 10 minutes, for 15 minutes total. Mix lemon zest and juice, parsley, garlic, and remaining 3 tbsp. oil; season salsa. Spoon over Romanesco.
