Sweet & Tangy Carrots

Ingredients

  • 2 lbs. carrots, sliced
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 3 tbsp. butter
  • 2 tbsp. Dijon
  • 1/4 tsp white pepper
  • 2 tbsp. minced fresh parsley

Directions

  1. Place 1 inch of water, carrots and salt in a large saucepan; bring to a boil. Reduce heat; cover and simmer until tender, 15-20 minutes. Drain.

  2. Return carrots to pan; add the brown sugar, butter, Dijon, and pepper. Cook and stir over low heat until well coated. Sprinkle with parsley. Serve with a slotted spoon.
