Ingredients
- 8 slices thick-cut bacon, chopped
- 2 garlic cloves, minced
- 2 tsp kosher salt
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 6 medium russet potatoes
- Garnish: chopped fresh parsley

Preheat oven to 425. Line a large rimmed baking sheet with parchment paper.

In a large skillet, cook bacon over medium heat, stirring occasionally, until crisp, about 15 minutes. Remove bacon using a slotted spoon, and let drain on paper towels, reserving 1/4 cup drippings in pan.

Add garlic to pan; cook until fragrant, about 1 minute. Remove from heat; stir in salt, paprika and pepper until combined.

Cut 1/8 to 1/4-inch-thick slits crosswise into potatoes, being careful not to cut all the way through. Place potatoes on prepared pan. Brush with bacon drippings mixture.

Bake until fork tender, about 1 hour. Sprinkle with bacon. Garnish with parsley.
