Ingredients
- 1 1/2 lbs. assorted baby potatoes, halved
- 2 tbsp. olive oil
- 2 tbsp. chopped fresh parsley
- 1 tbsp. chopped fresh chives
- 1 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 tsp dried dill
- 1/4 tsp black pepper
- 1/2 cup finely shredded Parmesan, divided
- 1/2 tsp lemon zest
- 1 tsp fresh lemon juice
- Garnish: chopped fresh chives
Directions

Preheat oven to 400. Line a large rimmed baking sheet with parchment paper.

In a large bowl, toss together potatoes, oil, parsley, chives, garlic powder, salt, dill and pepper until well combined. Spread mixture onto prepared pan.

Bake until potatoes are tender, 20-25 minutes. Sprinkle with 1/4 cup cheese. Bake until cheese is melted and lightly browned, about 10 minutes more. Remove potatoes from oven; stir in lemon zest and juice, and sprinkle with remaining 1/4 cup cheese. Garnish with chives. Serve immediately.
