Berry Crumb Bars

Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch salt
  • 1 cup shortening
  • 1 egg, lightly beaten
  • 1 tbsp. cornstarch
  • 4 cups frozen raspberries

Directions

  1. Preheat oven to 375. Grease a 9×13-inch baking pan.

  2. Stir together flour, 1 cup sugar, the baking powder, cinnamon and salt in a large bowl. Cut in shortening with a pastry blender or fork until mixture resembles coarse crumbs. Stir in egg with a fork (dough will remain crumbly). Press half of crumb mixture firmly and evenly into prepared pan.

  3. Stir together remaining 1/2 cup sugar and the cornstarch in a large bowl. Add berries; stir until coated. Spoon over crumb mixture in pan. Sprinkle with remaining half of crumb mixture. Bake until golden and filling is bubbly, 40-45 minutes. Let cool in pan on a wire rack.
