Amazing Pecan Coffee Cake

Ingredients

  • 2 cups flour
  • 1 tbsp. baking powder
  • 1/4 tsp salt
  • 1 cup butter, softened, plus 2 tbsp. melted butter
  • 1 cup sour cream
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 tbsp. vanilla extract
  • 1/2 cup brown sugar
  • 1 cup chopped pecans
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 350. Line a 9×13-inch pan with foil and coat with cooking spray.

  2. Stir together flour, baking powder and salt in a bowl. In a large bowl, beat 1 cup softened butter with an electric mixer until light and fluffy. Gradually beat in sour cream, then white sugar. Beat in eggs, 1 at a time, then stir in vanilla. Fold in flour mixture with a spatula, mixing just until incorporated. Spread batter into prepared pan.

  3. Stir together brown sugar, pecans and cinnamon in a bowl. Stir in 2 tbsp. melted butter until crumbly. Sprinkle over cake batter.

  4. Bake until a toothpick inserted into center of cake comes out clean 30-35 minutes. Let cool in pan 10 minutes, then turn out onto a wire rack and peel off foil.
