French Fry Salad

Ingredients

  • 28 oz. bag frozen shoestring fries
  • 2 tsp olive oil
  • 2 tsp rosemary, chopped
  • 1/2 shallot, minced
  • 3 tbsp. champagne vinegar
  • Pinch of salt
  • 2 tbsp. olive oil
  • 1 tbsp. Dijon
  • 1 head frisee, chopped
  • 1/4 cup chopped chives
  • 2 oz. crumbled goat cheese
  • Salt and pepper, to taste

Directions

  1. Toss half a bag of fries with olive oil and rosemary. Spread on a baking sheet and bake at 425 until crisp, about 30 minutes. Meanwhile, mix shallot, vinegar, and a pinch of salt in a large bowl; whisk in olive oil and Dijon. Add frisee and chives. Add the fries and goat cheese, season with salt and pepper and toss.
