Ingredients
- 28 oz. bag frozen shoestring fries
- 2 tsp olive oil
- 2 tsp rosemary, chopped
- 1/2 shallot, minced
- 3 tbsp. champagne vinegar
- Pinch of salt
- 2 tbsp. olive oil
- 1 tbsp. Dijon
- 1 head frisee, chopped
- 1/4 cup chopped chives
- 2 oz. crumbled goat cheese
- Salt and pepper, to taste
Directions

Toss half a bag of fries with olive oil and rosemary. Spread on a baking sheet and bake at 425 until crisp, about 30 minutes. Meanwhile, mix shallot, vinegar, and a pinch of salt in a large bowl; whisk in olive oil and Dijon. Add frisee and chives. Add the fries and goat cheese, season with salt and pepper and toss.
