Ingredients
- 1 cup cornmeal
- 3/4 cup flour
- 1 tbsp. sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp kosher salt
- 1 1/4 cups buttermilk
- 1 egg, beaten
- 1 tbsp. chopped sage
- 1 tbsp. chopped thyme
- Vegetable oil, for frying

Whisk cornmeal with flour, sugar, baking powder, baking soda, and kosher salt in a large bowl. Add buttermilk and egg and whisk until smooth. Stir in sage and thyme. Working in batches, deep-fry scoops of batter in 375 degree oil until puffed and golden, about 4 minutes. Drain on paper towels.
