faux mashed potatoes

Ingredients

  • 2 1/4-2 1/2 lbs white cauliflower or one large head
  • 3 table oil
  • 1 large leek
  • 2-3 tea thyme chopped or 1 tea dry
  • 3 large garlic cloves minched
  • 1/2 cup grated parm cheese
  • 1/4 cup sour cream
  • salt and pepper

Directions

  1. cut cauliflower into florets

  2. bring several inches of water to a boil with a steamer basket and insert into a large pot.

  3. add cauliflower

  4. steam 13-15 min or til very soft.

  5. drain and place back in pan to stay hot

  6. trim off green top and root end of the leek

  7. use the white and pale green part only. cut leek in half lenghwise and rinse.

  8. cut into thin slices.

  9. heat 1 table oil and saute leek and thyme add garlic salt and pepper.

  10. add cauliflowe and leek mix to food processor.

  11. add cheese and the rest of oil

  12. puree til smooth and creamy

  13. add salt and pepper
