Ingredients
- 2 1/4-2 1/2 lbs white cauliflower or one large head
- 3 table oil
- 1 large leek
- 2-3 tea thyme chopped or 1 tea dry
- 3 large garlic cloves minched
- 1/2 cup grated parm cheese
- 1/4 cup sour cream
- salt and pepper
Directions

cut cauliflower into florets
-
bring several inches of water to a boil with a steamer basket and insert into a large pot.

add cauliflower
-
steam 13-15 min or til very soft.

drain and place back in pan to stay hot

trim off green top and root end of the leek
-
use the white and pale green part only. cut leek in half lenghwise and rinse.

cut into thin slices.

heat 1 table oil and saute leek and thyme add garlic salt and pepper.

add cauliflowe and leek mix to food processor.

add cheese and the rest of oil
-
puree til smooth and creamy

add salt and pepper
