GAPS Basic Meat Stock

make enough for 4 days and interchange with chicken stock. This means about 4 quarts of meat stock. Double this recipe to get the amount needed

Cook time: 360 minutes
Serves 2 people

Ingredients

  • 3 lbs. of meaty soup bones or shanks.
  • 4 carrots
  • 1 onion
  • 3 stalks of celery
  • 1 teaspoon peppercorns
  • Salt to taste (Celtic or Baja Gold Mineral salt)
  • 2 garlic cloves to add at the end
  • Water to cover 2" above your meat

Directions

  1. Put ingredients in a 5-6 quart dutch oven and simmer 1-6 hrs. You can taste and salt as needed.

  2. Use a garlic press and add the garlic in the last 30 minutes of cooking.
