Buffalo Chicken Chili

Ingredients

  • 1.5 pound chicken thighs
  • 15 oz canned pinto beans (drained and rinsed)
  • 14.5 oz can fire roasted tomatoes (drained)
  • 14.5 oz can rotel original
  • 2 cups chicken broth
  • 1/2 cup buffalo wing sauce
  • 1 package ranch dressing mix
  • 1 cup or more frozen corn kernels
  • 1/2 teaspoon onion powder
  • 2 garlic cloves
  • 1/4 teaspoon salt
  • 8 oz cream cheese
  • Blue cheese crumbles

Directions

  1. Add all ingredients except for the cream cheese and blue cheese to the crock pot on low or high for 8 or 4 hours. Turn the crock pot on low and stir in the cream cheese. Serve with blue cheese crumbles as a garnish
