GAPS Crock-Pot Soup

Ingredients
- 1 quart Chicken or beef stock
- 1 lb. stew beef, rump roast, or chuck roast
- 2-3 tablespoons animal fat, coconut oil, or ghee
- 1 head kale(stems removed)
- 2-4 chopped fresh tomatoes or 1 can (28 oz) organic whole peeled tomatoes.
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, pressed
- 2 sprigs each rosemary, thyme or other fresh herbs
- 1 bay leaf
- Sea salt
Directions

Chop and put everything, EXCEPT THE FRESH VEGGIES, into a crock-pot and cook slow and low for 4 to 6 hrs. Add the vegetables about 40 to 50 minutes before the soup is done.
