Ingredients
- 8 baby Yukon Gold potatoes
- 2 tbsp. sour cream
- 2 tbsp. shredded cheddar
- 1 tbsp. butter, softened
- 2 slices cooked bacon, chopped
- Pinch each of salt and pepper
- Chopped chives, for topping
Directions

Boil potatoes in salted water until tender, 12-15 minutes. Let cool slightly, then halve and scoop out the insides. Mash the potatoes with sour cream, cheddar, butter, bacon, salt and pepper. Spoon the filling into the potato skins, arrange on a baking sheet and bake at 450, until golden brown, 10 minutes. Top with chopped chives.
