Ingredients
- 2 tbsp. butter
- 4 oz. sliced mixed mushrooms
- Kosher salt and black pepper
- 1 1/4 cups chicken broth
- 1 cup short-grain brown rice
- 1/2 tsp salt
- 2 tbsp. chopped parsley
Directions

Set Instant Pot to saute on HIGH. Add butter and mushrooms; cook 6-8 minutes. Season with salt and pepper. Add chicken broth, rice and salt. Put on and lock the lid. Set to pressure-cook on HIGH for 25 minutes. Let the pressure release naturally. Stir in parsley.
