Pot roast and veggies

Ingredients

  • 1 ;lean beef pot roast
  • 2 tsp oil
  • 1 1/2 cups water, divided
  • 3/4 c brewed coffee
  • pepper
  • 6 carrots
  • 2 c potato pieces
  • 1 large tomatoe, chopped
  • 1 onion, sliced
  • 2 tbs flour
  • 4 cups cooked brown rice

Directions

  1. Brown m eat in oil in dutch oven. Pour 1 cup water and coffee over meat. Seasonwith pepper. Bring to boil cover, simmer 1 hour. Add carrots, potatoes, tomatoes, and onion. Simmer additional 45 minutes, Place meat and vegs on a platter, reserveing liuid in pan. Mix remaing water and flour. Gradually add to hot liquid. Cook, stirring constantly until mixuter thickens.
