Shaved Fennel Salad with Red Onion and Feta Dressing

Ingredients

  • 12 oz. feta
  • 1/2 cup olive oil
  • 1/3 cup fresh tarragon leaves
  • 1 tsp honey
  • 1 garlic clove
  • 2 bulbs fennel, shaved lengthwise, plus fronds for garnish
  • 1 small red onion, sliced into thin wedges
  • 1/2 cup toasted pistachios

Directions

  1. In food processor, puree feta, olive oil, tarragon, honey and garlic, adding water by tablespoonfuls if needed to thin dressing. In large bowl, toss shaved fennel and onion with dressing; season. Top with pistachios and fennel fronds.
