Pulled Pork Sandwiches with Carolina Mustard Sauce

Puree 7 oz. can chipotle peppers in adobo sauce until smooth. Freeze in 1 tbsp. portions for future use.

Ingredients
- 1/2 cup stone-ground mustard
- 1/2 cup yellow mustard
- 1/2 cup apple cider vinegar
- 1/4 cup cane syrup
- 1/4 cup light brown sugar
- 1 tbsp. chipotle pepper puree
- 2 tsp Worcestershire
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 1 tbsp. mayo
- Pulled pork, buns and coleslaw, to serve

In a small saucepan, bring all mustard, vinegar, cane syrup, brown sugar, chipotle puree, Worcestershire, garlic powder and pepper to a boil over medium-high heat; reduce heat to medium-low. Cook, stirring occasionally, for 5 minutes. Remove from heat; whisk in mayo until well combined. Cover and refrigerate for at least 1 hour or for up to 1 week. Serve with pulled pork, buns and coleslaw.
