Fried Four-Cheese Balls

Ingredients

  • Vegetable oil, for frying
  • 4 large eggs
  • 2 cups panko
  • 1 oz. package ranch seasoning mix
  • 1 tbsp. chopped fresh chives
  • 2 cups shredded sharp Cheddar
  • 1 cup shredded Havarti
  • 1 cup shredded mozzarella
  • 1 cup shredded Swiss
  • Marinara sauce, to serve

Directions

  1. In a large Dutch oven, pour oil to a depth of 4 inches; heat over medium-high heat until a deep-fry thermometer registers 350.

  2. In a shallow dish, whisk together eggs until well beaten. In another shallow dish, whisk together bread crumbs, ranch seasoning and chives.

  3. In a large bowl, stir together all cheese; measure 2 tbsp., squeeze tightly, and roll into a ball. Working in batches, dredge cheese balls in eggs, letting excess drip off; coat in panko mixture, pressing gently to adhere. Repeat egg and bread crumb procedure once.

  4. Fry balls in batches until golden brown, about 1 minute. Remove using a slotted spoon, and let drain on paper towels. Serve immediately with marinara sauce.
