Ingredients
- 2 1/2 cups chocolate graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 12 oz. package semisweet chocolate chips
- 3 8-oz. packages cream cheese, softened
- 1 cup sugar
- 2 tbsp. all-purpose flour
- 2 tbsp. unsweetened cocoa powder
- 1/4 tsp kosher salt
- 3 large eggs, room temp
- 8 oz. sour cream
- 2 tbsp. whole milk
- 2 tsp vanilla extract
- Garnish: sweetened whipped cream, chocolate shavings

Preheat oven to 350. Line a 13×9-inch baking pan with parchment paper, letting excess extend over sides of pan; spray paper with baking spray with flour.

In a medium bowl, stir together cracker crumbs and melted butter until combined. Press mixture into bottom of prepared pan.

Bake until set, about 12 minutes. Let cool on a wire rack. Reduce oven temp to 275.

In a medium microwave-safe bowl, heat chocolate chips on high in 15-second intervals, stirring between each, until melted and smooth (1 to 1 1/2 minutes total).

In a large bowl, beat cream cheese with a mixer at medium-high speed until smooth, about 2 minutes. Add sugar, flour, cocoa, and salt, beating until combined. Add eggs, one at a time, beating just until combined after each addition. Beat in melted chocolate, sour cream, milk and vanilla until combined. Spread batter onto crust.

Bake until center is just set, 50-55 minutes. Let cool completely in pan on a wire rack. Cover and refrigerate until set, at least 4 hours or overnight.

Using excess parchment as handles, remove from pan, and cut into bars. Garnish with whipped cream and chocolate.
