Pancetta-Wrapped Turkey Breast Stuffed with Spinach and Feta

Ingredients

  • 2 boneless, skinless turkey breast halves (about 3 1/2 lb. total)
  • 1 tsp dried oregano
  • 3/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 2 cups fresh spinach
  • 1 cup crumbled feta
  • 6 oz. pancetta, thinly sliced

Directions

  1. Preheat oven to 350. Cut each turkey breast half almost in half horizontally, leaving 1 inch uncut. Open like a book and lay flat between 2 pieces of plastic wrap. Using a meat mallet, pound each breast half to 1/2-inch thickness. Remove top piece of plastic wrap.

  2. Sprinkle oregano, pepper, salt and cumin over each breast half. Arrange 1 cup spinach and 1/2 cup feta on 1 breast half, leaving a 1-inch border. Top with other breast half. Repeat with remaining spinach and feta. Roll up turkey and stuffing, starting from a long side, using plastic wrap to get a tight roll. Remove and discard plastic wrap. Cover roll with pancetta slices; tie roll with kitchen twine crosswise at 1-inch intervals. Transfer rolled turkey to a rack in a roasting pan.

  3. Roast turkey 1 1/2 to 2 hours.

  4. Turn on broiler; broil wrapped turkey until pancetta is crisp, about 2 minutes per side. Let turkey rest 10 minutes. Remove strings before slicing.
