Ingredients
- 4-5 lb. whole chicken, cut into 8 pieces, or 3 lb. chicken pieces
- 1 large red onion, cut into wedges
- 1 lemon, sliced
- 8 garlic cloves
- 4 sprigs fresh rosemary, plus more for garnish
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper

Preheat oven to 450.

Add chicken, red onion, lemon slices, garlic and 4 rosemary sprigs in a large bowl. Drizzle with oil and sprinkle with salt and pepper; toss to coat. Spread mixture in a 10×15-inch baking pan.

Roast 35-40 minutes or until cooked through. Garnish with rosemary.
