Ingredients
- 1 lb. new red potatoes, quartered
- 1/4 cup onion, diced
- 2 tbsp. butter, melted
- 1 tbsp. honey
- 1 tsp dry mustard
- Pinch each of salt and black pepper
- Fresh parsley, for garnish

Preheat oven to 375. Lightly grease a 9×13-inch baking pan. Spread potatoes in a single layer; top with onion. Stir together butter, honey, dry mustard, salt and pepper in a bowl. Drizzle mixture over potatoes; toss to coat. Roast, stirring halfway through, until tender, about 35 minutes. Garnish with parsley.
