Honey-Roasted Red Potatoes

Ingredients

  • 1 lb. new red potatoes, quartered
  • 1/4 cup onion, diced
  • 2 tbsp. butter, melted
  • 1 tbsp. honey
  • 1 tsp dry mustard
  • Pinch each of salt and black pepper
  • Fresh parsley, for garnish

Directions

  1. Preheat oven to 375. Lightly grease a 9×13-inch baking pan. Spread potatoes in a single layer; top with onion. Stir together butter, honey, dry mustard, salt and pepper in a bowl. Drizzle mixture over potatoes; toss to coat. Roast, stirring halfway through, until tender, about 35 minutes. Garnish with parsley.
