Ingredients
- 3 cups grated fresh cauliflower or 1 pkg. riced cauliflower
- 1 large egg, lightly beaten
- 4 oz. cheddar, shredded
- 1/4 cup real bacon bits
- 1 tbsp. chopped fresh chives
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 pinch cayenne pepper

Preheat oven to 400. Coat a baking sheet with cooking spray.

Microwave cauliflower in a microwave-safe bowl 2 minutes. Let cool 5 minutes.

Transfer cauliflower to a clean dish towel; squeeze out as much moisture as possible. Stir together cauliflower and remaining ingredients in a large bowl. Transfer mixture in 6 equal portions onto prepared baking sheet, leaving space between each. Using your hands, flatten portions and shape into ovals.

Bake until browned, about 15 minutes. Turn broiler on low; broil about 5 minutes. Let cool 5 minutes.
