Keto Cauliflower Hash Browns

Ingredients

  • 3 cups grated fresh cauliflower or 1 pkg. riced cauliflower
  • 1 large egg, lightly beaten
  • 4 oz. cheddar, shredded
  • 1/4 cup real bacon bits
  • 1 tbsp. chopped fresh chives
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 pinch cayenne pepper

Directions

  1. Preheat oven to 400. Coat a baking sheet with cooking spray.

  2. Microwave cauliflower in a microwave-safe bowl 2 minutes. Let cool 5 minutes.

  3. Transfer cauliflower to a clean dish towel; squeeze out as much moisture as possible. Stir together cauliflower and remaining ingredients in a large bowl. Transfer mixture in 6 equal portions onto prepared baking sheet, leaving space between each. Using your hands, flatten portions and shape into ovals.

  4. Bake until browned, about 15 minutes. Turn broiler on low; broil about 5 minutes. Let cool 5 minutes.
