Ingredients
- For Muffins:
- 1 3/4 cups flour
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 2 eggs
- 1/2 cup milk
- 2 cups peeled, cored and sliced apples
- 3/4 cup chopped walnuts, toasted
- For topping:
- 1/4 cup sugar
- 3 tbsp. flour
- 1/2 tsp cinnamon
- 2 tbsp. butter, cubed
- 1/2 cup chopped walnuts, toasted
Directions
-
Make muffin batter: Preheat oven to 375. Coat top and cups of a jumbo-muffin pan with cooking spray, or line cups with paper liners.
-
Stir together flour, baking powder, and cinnamon in a bowl. In another bowl, cream together butter, sugar, vanilla, and salt with an electric mixture until light and fluffy. Beat in eggs, one at a time. Stir in flour mixture alternately with milk, stirring just until incorporated. Fold in apples and walnuts. Divide batter among muffin cups, filling each three-quarters full.
-
Make Topping: Stir together sugar, flour and cinnamon in a bowl. Cut in butter using a pastry blender or 2 butter knives until pieces are pea size. Add walnuts, then generously sprinkle over batter in cups.
-
Bake until tops are golden brown and a toothpick inserted into centers comes out clean, about 30 minutes. Remove muffins from pans and let cool on a wire rack.
