Pumpkin pancakes

Serves 5 people
Ingredients
- 2 cups of your favorite dry pancake mix
- 3 Tbsp dark-brown sugar
- 2 1/2 tsp pumpkin-pie spice
- 1 1/2 cups milk
- 1 cup canned pure pumpkin puree (not pie filling)
- 1 egg, beaten
- 1 tsp pure vanilla extract
- 1 Tbsp vegetable oil, plus more for the griddle Pure maple syrup
Directions

Mix dry ingredients in a large bowl. Mix wet ingredients separately, then combine with dry ingredients.

Pour on to greased griddle on medium-high heat. Flip when air bubbles appear and break on the surface. Cook second side until golden. Serve warm with warm syrup and butter.
