lemon shortbread cookies

Ingredients

  • 1 cup unsalted butter softened
  • 3/4 cup sugar
  • 1 table grated lemon zest
  • 2 tea fresh lemon juice
  • 2 1/4 cups flour
  • 1/4 tea salt
  • yellow sparkling sugar for sprinkling

Directions

  1. in a bowl cream butter and sugar

  2. add zest and juice

  3. add flour and salt

  4. form into 2 logs about 1 1/2 -2 inches

  5. wrap in waxed paper and in frig at least 2 hours

  6. preheat 350

  7. roll logs in sparkling sugar to coat all sides

  8. reserve sugar to sprinkle on each cookie before baking

  9. slice into 1/3 inch thick slices

  10. pace on baking sheets

  11. bake 12-15 min

  12. rotating pans halfway through baking til cookies look dry but not browned
