slow cooker chicken and cheese taquitos

Ingredients

  • 1 lb chicken breasts
  • 1 pack taco seasoning
  • 3/4 cup water or chicken broth
  • 1/4 cup cream cheese
  • 1/4 cup salsa
  • 8 8 inch whole grain tortilla
  • 1 1/2 cup shredded cheddar or pepper jack cheese

Directions

  1. In slow cooker add chicken breasts

  2. cover both sides of chicken with taco seasoning

  3. add water or broth

  4. cook on low 3-4 hours until it shreds easily

  5. add cream cheese and salsa to chicken and stir

  6. preheat oven 400

  7. arrange tortillas on flat surface and top each with equal amount of chicken mix

  8. top with 2-3 table shredded cheese and roll tortillas

  9. place on baking sheet seem side down

  10. spray with cooking spray and bake 10-20 min.

  11. to freeze complete til you arrange on flat surface then place rolled up tortillas in a freezer bag

  12. to prepare either thaw overnight and cook, defrost in microwave and cook or place on baking sheet and cover with foil and bake
