- 1 tea mustard
- 2 tea lemon juice
- 12 table oil
- salt to taste

place yolk into bowl and beat til it lightens in color about 1 minute

mix mustard and 1 tea lemon juice

while whisking slowly add 6 table of oil very slow stream til mixed

mix in 1 table more lemon juice

keep whisking slowly add the last 6 table of oil very slow

season to taste with extra lemon juice and salt. frig extra
