Sweet Potatoes with Avocade Ranch Dressing

Ingredients

  • 1 1/2 lbs. sweet potatoes (cut into chunks)
  • 3 tbsp. olive oil
  • 1 tsp ancho chile powder
  • 1/2 tsp ground coriander
  • 1/2 tsp kosher salt
  • 1/2 avocado
  • 1/4 cup buttermilk
  • 2 tbsp. mayo
  • 2 tbsp. chopped dill
  • 2 scallions, sliced
  • 1 tbsp. white wine vinegar
  • 1 tbsp. water
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • Diced avocado

Directions

  1. Toss sweet potatoes, olive oil, ancho chile powder, coriander and salt on a baking sheet. Roast at 450 until tender, 30 minutes. Puree 1/2 avocado, buttermilk, mayo, dill, scallions, vinegar, water, garlic and salt in a blender. Top the potatoes with the dressing and diced avocado.
