Ingredients
- 1 1/2 lbs. sweet potatoes (cut into chunks)
- 3 tbsp. olive oil
- 1 tsp ancho chile powder
- 1/2 tsp ground coriander
- 1/2 tsp kosher salt
- 1/2 avocado
- 1/4 cup buttermilk
- 2 tbsp. mayo
- 2 tbsp. chopped dill
- 2 scallions, sliced
- 1 tbsp. white wine vinegar
- 1 tbsp. water
- 1 garlic clove, minced
- 1/2 tsp salt
- Diced avocado
Directions

Toss sweet potatoes, olive oil, ancho chile powder, coriander and salt on a baking sheet. Roast at 450 until tender, 30 minutes. Puree 1/2 avocado, buttermilk, mayo, dill, scallions, vinegar, water, garlic and salt in a blender. Top the potatoes with the dressing and diced avocado.
