Bacon-Cheddar Deviled Eggs

Ingredients

  • 6 eggs
  • 1/4 cup mayo
  • 1 tbsp. finely shredded cheddar cheese
  • 1 1/2 tsp Dijon
  • 2 slices bacon, crisp-cooked and chopped
  • Snipped fresh chives

Directions

  1. Cover eggs with cold water in a saucepan. Bring to a boil, then immediately remove from heat. Cover and let stand 15 minutes; drain. Transfer eggs to ice water until cool enough to handle.

  2. To peel, gently tap eggs against a countertop, then roll on the countertop under the palm of your hand. Peel off eggshell, starting at large end. Halve eggs lengthwise.

  3. Transfer yolks to a small bowl and mash with a fork. Stir in mayo, cheese and Dijon until well combined. Spoon or pipe yolk mixture into egg halves. Chill, covered, until ready to serve. Top eggs with bacon and sprinkle with chives.
