Pasta Amatriciana

Ingredients

  • 4 slices bacon, diced
  • 1/2 cup chopped onion
  • 1 tsp minced garlic
  • 1/4 tsp crushed red pepper
  • 2 (14.5 oz.) cans stewed tomatoes, with juices
  • 1 lb. dried linguine
  • 1 tbsp. chopped fresh basil, plus more for garnish
  • 2 tbsp. finely shredded Parmesan

Directions

  1. Add bacon to a large saucepan over medium heat; cook until crisp, about 5 minutes. Transfer bacon to paper towels to drain. Drain all but 2 tbsp. drippings from pan.

  2. Add onion to pan; cook over medium heat about 3 minutes. Stir in garlic and red pepper; cook 30 seconds. Add tomatoes and bring to a boil. Reduce heat; simmer 10 minutes, breaking up tomatoes with a wooden spoon.

  3. Meanwhile, cook pasta as directed. Drain.

  4. Stir basil and bacon into tomato mixture, then stir in cooked pasta. Garnish with additional basil and sprinkle with Parmesan.
