Ingredients
- 1/2 lb. ground beef
- 1/4 cup chopped onion
- 2 cups chopped cabbage
- 2 medium carrots, chopped
- 1 cup fresh Brussels sprouts, quartered
- 1 cup chopped fresh kale
- 1 celery rib, chopped
- 1 tbsp. minced fresh parsley
- 1/2 tsp pepper
- 1/2 tsp dried basil
- 1/4 tsp salt
- 3 cups beef stock
- 14.5 oz. Italian diced tomatoes, undrained
Directions

In a skillet, cook and crumble ground beef with onion over medium-high heat until meat is browned, 4-5 minutes. Transfer beef mixture to a slow cooker. Stir in remaining ingredients.

Cook, covered, on LOW until the carrots are tender, 5-6 hours.
