- Russet potatoes
- Ground beef
- Green pepper
- Shredded carrot
- Onion
- Minced garlic
- Spaghetti sauce
- Chopped pepperoni
- Splash of red wine
- Oregano
- Salt
- Colby-Monterey Jack cheese

Preheat the oven to 400. Scrub the spuds. Pierce them several times with a fork. Bake until tender, 50-75 minutes. Cut an “X” in each potato. Fluff the pulp with a fork.

Cook up ground beef with green pepper, carrot, onion and garlic; drain. Mix in spaghetti sauce, pepperoni, red wine, oregano and salt. Spoon mixture over potato. Sprinkle with cheese.
