Ingredients
- Russet potatoes
- Onion slices
- Corn
- Bacon, cooked and chopped
- Shredded barbecue pork
- Goat cheese
- Fresh minced cilantro

Preheat the oven to 400. Scrub the spuds. Pierce them several times with a fork. Bake until tender, 50-75 minutes. Cut an “X” in each potato. Fluff the pulp with a fork.

Saute onion slices and corn in bacon drippings. Layer each potato with pork, corn mixture, bacon pieces, goat cheese and cilantro.
